Waxing my first attempt at Farmhouse Cheddar

It will be ready in 60 days. Traditional cheddar usually ages from 1-4 years. Pepper Jack needs to age 1-4 months. I think I am going to try that next.

Say Cheese!


Here is my litlle corner of my friend's produce table at the Marfa farmstand. On a purple sarong, of course. I have three flavors left (the plain sold out before I could even take a picture) Chipotle(r) garlic herb(y) jalepeno(gr)- I did not mean to make reggae cheese- it just worked out this way. With the plain, I had the Mexican flag colors- very W TX. :)
